I was at a restaurant here in Houston, and some drunk bastard sitting at the next table said "bring me a live crawfish". He looks over at us and said "I'm gonna eat this". It was crawling on the table, so he picked it up and shoved the whole thing in his mouth and started chewing. He almost puked.. we almost puked.. it was one of the most disturbing things I've ever seen.
I love 'em boiled, though.

crawfish, as we call em in louisiana are everywhere. when it rains a lot they come up out of the ground and crawl everywhere. i have many on my property. if ya haven't tried em, you should. they are not a bug by the way, they are a crustean as is a lobster. land lobster?????????, yea. if anybody ever visits go to most eateries, as they usually serve them daily or as a all you can eat buffet on special days. they are real good seasoned hot, and boiled with corn on cob, and potatoes.

efabman is right. you pull off the tail and peel it or squeeze the meat out(faster) and then suck the head, boiled with onions and corn and potatoes, have all ever heard of Tony Chacheries seasonings? prob just a southern thing, but yall do have Tabasco, right?????

honestly,, you guys crack me up. i dont think that any one who wasnt born in bred in Louisiana (northern louisiana doesnt counttheir just a bunch of damn hicks hehe) they actually sell tonys at some of the stores up here in nc now, i dont know if they have it in az, another good thing is tiger sause but anyway back to my point, i dont know why this post was started, but if you do decide to go buy some crawfish, make sure it is american, the chinese are killing us louisiana boys, underselling us and all, any way, it is crawfish, they call them that, cause in the water, if you scare it it will crawl backwards into its hole so fast you couldnt see where it went, when everything drys up a little bit you can see their lil chimney holes all over a pasture in LA, pretty good stuff, if you want to catch em get some traps and go to a swampy area and put somehting stinkyy in it, check it every 15 minutes, and dump em in a bucket, but keep m live, other wise they will boil with straight tails, then you wont know how long they been dead.... maybe rotten, also dont boil em to long, if you follow the instructions on the zatterans seafood boil you will do ok, i was in La about 2 months ago, and they aere selling for 175 a lb cooked in lafayette where im from. yall have a good oen

Used to catch them in NE when I was a kid. Heard that you could eat them if you boiled them like lobster, and being a poor kid that couldn't afford lobster, tried to boil them once while I was fishing. Don't think I boiled them long enough though. They aren't supposed to still be wiggling a little, are they? Decided then that I needed to move to the city and get a high faluting job so that I could afford lobster!
Not really, but I did try to boil them once and they were still kicking a little, must have been about 7 or 8 then. Scott

When I was down in Texas I had some stuff called etoufee with crawfish in it, I'd love to find a good recipe for that. Sort of makes me wonder how much it would cost to have a few pounds shipped up here

We have those in our lakes. They aren't exactly plentiful here. You'd be pretty hard pressed to make a meal out of them. Oh and for the record, we call them "CRAYFISH" here. However, the sucking on the head thing, has officially made me never want to try them. It's the same as lobster, if it still has eyes, keep it away from me!!!

I used to catch them all the time out east when I was a kid, for bait. I would catch a rock bass with a worm, then beat it up with a rock so its nice and juicy, tie a string to it and toss it in the water. Then pull it back in five minutes all covered with crayfish. Then I'd pull the meat out of the tails and go to a different spot and catch 2 and 3 lb smallmouth bass. Now that I think of it I've seen some real doozies in my day as big as a small lobster. Still trying to figure why I never bothered to eat any myself.

Crawfish!!
If it's red and can pinch right through your skin, it's crawfish. If it's wee little black thing it's a crawdad. Careful checkin those traps YALL, them crawfish have some mighty natural enimies. Them Mocassins and Cottonmouths love to eat em up and follow them into them there traps! They get might aggressive even with a mouthfull of tasty Crawfish. hehehehehe
Good tip on the straight tails, I'm gettin sick thinken about eaten rotten crawfish!
