I have only been to Jefferson once so i can't really compare the 2 for you but i know i spent 3 days walking around looking at everything. Iola is a big show more vendors than Jefferson i think but not as many show cars. I may be wrong but thats how it seemed to me last year. Im sure someone else will chime in here.
