I'd try to keep as much 'as is' to keep grandpa as much as was. I'd want to see it remain how grandpa had it to keep the feel of it still being grandpa's truck.

But a survivor kept original makes me feel oh so warm and fuzzy inside.

I think Modges has a point, it is yours, do what you want.
I also think the strong argument is made by it being so close to stock original. The closer it is to stock, the easier it is to do a full on restoration.

I would leave the mods to a truck that needs all that work done anyways, like mine. My thought process is most usually along the lines of "Well I gotta mess with this anyways, might as well tweak it while I am there"

Good luck on your build, looks like a very fine specimen and something you are going to be VERY proud of !!!
