Some people also like a saltwater soak first too. The salt will draw some of the natural moisture out, resulting in better overall cooking. They don't even start to brown until that moisture is gone or you burn up the outside and mushy in the middle.

ETA, I like me some In-N-Out, Jack in the Box, or Whataburger, but I think it's mostly because they aren't available here. The closest any of these places is to me is the In-N-Out in East St.Louis. Its about 8 hrs west.
True. That is what it is like. I cant get it here. There is a 5 Guys. It is a pain in the ass to go into Bend. The town went from 20K to 100+K and I just avoid it. The nearest Popeyes is in the Portland area and that is way too Fd up.

I worked at a good steakhouse in Dallas as a kid washing dishes and making fries and chicken fried steaks. The place had its own butcher shop in the back and the owner had a ranch that supplied the beef.
The huge potatoes went in a machine like a washing machine with a tub made of a rock like substance.
It would spin and take the skin off. Then I would hold the spud in a wall mounted cutter with a big lever that would force the spud down through the blades. I would say they were .50" openings.
The fries would drop in a 50 Gal. plastic drum of water and I poured in a packet of white powder that I thought was to keep the fries from turning grey.
I dont remember how long they sat in the water. Man they were good.
I will tell you about the chicken fried steaks later. The sun is out now.

Re: In-N-Out Burger

It’s funny after all these years I’ve never asked for the grilled onions. And I love them. What’s wrong with me?

I get grilled onions every time we go there. And not too long ago, I found out you can ask for pickles -- no charge.

Not on the menu but next time you go to In N Out order your burger and fries "Animal Style" Crazy Good....Get Lots Of Napkins!

The hamburger beef patty is grilled with mustard, topped with extra spread, pickles, and grilled, caramelized onions.

The fries are topped with grilled onions, pickles, spread and cheese.

Re: In-N-Out Burger

If you're not a fan of In & Out fries, order them "Well Done" next time. They cook them a bit longer and they're 10x better that way.

Love me the grilled onions. Have to ask for pickles next time. Not a fan of the animal style myself. Tried it once and fell apart in my hands. Should have come in a bowl.

I worked at the first in-n-out burger in Baldwin Park Calif when I was 16 Still one of the best fresh burger out there never frozen meat and fresh fries. They just came out here to Tennessee with there first store in I believe Franklin Tenn just below Nashville. Also one of the best chili burgers of all time was from the original Tommy's at 3rd and rampart in Los Angeles Calif.

I used to live in Baldwin Park (the good part ) Right down the street from there and they had In N Out University on the other side of the freeway. I'd always go there because I figured the trainee's would try harder.

Can't beat the original Tommy's either. I thought for sure they'd have one in Bakersfield when I moved up this way but nope. And only 2 In N Out's.

So I found a Tommy's copycat recipe on Youtube on Ballistic BBQ and it's spot on so I just make em. It's a PITA to make the chili but it's worth it.

Tommy's in Barstow almost made having to be in Barstow worthwhile

Had the worst burrito in my life in Barstow. It had carrots inside. I think it was Dinty Moore in a tortilla.

Remember the 1 AM trips to the Tommy's on Rosco Blvd in the valley. Just burgers and dogs at the time. No fries or anything else as I recall. Good times.

Wow. Sadly, that's another unfortunate example of the state of our society these days.

I was stationed in that general area (Mare Island, Treasure Island) for about 9 months when I was in the Navy. Don't remember much about it, though.

Put one in Salem Oregon and the line was ridiculous, made me curious so about 18 months later when the line became tolerable I gave it try for the first time ever,I was disappointed and dumbfounded with all the hype.
