I've got one of those Sous Vide machines. It gets the internal temps perfect. Then just sear the meat and make it pretty. It works great.It's very precise. Nothing overcooked or undercooked.

I always had a hard time with scallops. Now I can nail it.

Just a silly food trend. I'd hand that back to the butcher and have him cut it to a reasonable size for grilling. I ain't paying $19 a pound for a bone. That's crazy. Look what trendiness did for chicken wings. Once po' folk food, the part of the chicken hardly worth messing with for most. Then comes the Buffalo style, they become the thing to eat while watching football on TV, and now we pay over 2x as much as boneless skinless chicken breast for bones, skin, fat, and a little meat. Don't get me started on potato skins

That's right, I spoke my mind. Some say that takes a lot of balls. Well, I guess I do

Working on my barn moving project I was moving things, for the first time in ages, from the area where the tree is. I had towing stuff in a metal bucket behind a tool cabinet against the wall. I grabbed the handle and picked the bucket up without the bottom or contents. The bottom had disintegrated.

Maybe when it finally gets an engine upgrade it can do that. It currently still has a straight 6 in it but the transmission is at least a 5 speed.

Remember the Yosemite Sam "back Off" mud flaps? I took a walk this morning and found another one I had forgotten about. There was a spin-off on those with a laid back '70s vibe with Marvin The Martian.

You never see these, as if it's common to see Yosemite Sam. I wonder what vehicle it fell off of

That's more of a roast than a steak for sure. It would be very hard to "grill", that needs low/indirect heat for a while.
The marbling on the regular ribeyes next to them looks good.
I just bought a couple last weekend for a little cookout with my mom. They came from a little butcher shop down the street from my house. It is a local favorite, but she hadn't had anything from there for years.
Since the heart attack a few years ago, I don't eat red meat. I make exceptions for special occasions, once in a while though.
After the sticker shock of $25/lb they were fantastic. She even made her family recipe potato salad, which only happens once a year or so now.

I don't eat a lot of potato salad unless it's homemade. Some is so delicious and others not so great. My mom makes a great version (of course) and one thing I miss about my ex-wife is hers. Everyone loved it

those cardinals are on the farm in mo, fairly common to see out here..

cardinals lay 4-5 eggs, looks like 5 hatchlings in that nest, 4 at least but we don't want to get too close..

doves are awesome! we have a nest at our house in oc that's raised a bunch of em..

doves lay 2 eggs, so baby pairs are common, old picture of a young pair

Mom's is written down, so I'll never lose it, but it's a lot of work. IE, not you typical mayo and mustard of the cheap stuff at the deli counter.
The liquid part is actually cooked in a double-boiler and stirred constantly by hand, to an exact point. Then it gets mixed into the rest.
It is not at all like the commercially available stuff, the only similarity is being served cold. It is not like "German" potato salad, which her dad used to make. That was served warm.
I can't do macaroni salad it all. Every one I have ever tried was too sweet, same with most commercially available cole slaw. I've had some that were great....homemade by someone at a cook-out or potluck.

That paste that they sell at the deli counter is inedible. I don't always make my own sauces. But whenever possible I make everything myself. Including a big mess in the kitchen. Nothing beats homemade.

This is my Potato Salad. I tweak it sometimes. No complaints. It always gets eaten.
.

• 6-8 Russet or red potatoes
• 1/3 c minced green onion
• 1/3 c Cilantro
• 1/3 c shredded carrot
• 1/3 c roughly chopped blacked olives
• 3/4 c mayonnaise
• 1/4 c sour cream
• Salt and pepper to taste (I like a lot)
• Cayenne Pepper on top (optional)

Let it sit in the fridge a day or so. It gets better.

Hmmm... Random, huh? How about one I took at a bull roast around 1980? We were burned out on all the beef and beer. Did it say what year 235 it is.. I have a 1955 235 out of a Bel Air car in my 39 .
