tire size, axle size and tubbing

I'd like to tub my 77 c10 stepside. How wide of a tire are you guys getting away with before shortening the axles and using one of those subframes (while keeping tire inside fenders)? What offspacing?

I saw a build that shortened the axles 7 inches each side, didn't look too hard. I really like the way the hoosier pro street radial 31x18.50s look.

Been searching but haven't found my answer yet, alot of pics but not many specs on what's been done to make it work.
