Which fuel tank sending units?

Truck is a 74 4x4 ground up restoration project that started life as a fleetside and is now a stepside.
I still haven't cut the hole in the one fender for the filler but would like to get the tanks bolted in for the last time.
I went to Rock Auto and they list them as 1,2 or 3 outlets running from $40 to $150 each.
When completed truck will see very little use and will be running a 496.My thought was to plumb both tanks into a single fuel log or "Y" block and a single line to the fuel pump and no evaporator canister will be used.
I have dual fuel tank gauges in the dash and want them working even if I don't run a tank selection switch.
The most common set-up I see is 2 outlets.
