Simplest possible replacement carb for '89 inline-6?

Howdy all, in preparation to perform my first ever engine rebuild on my old 250 inline-6 c10 step van I have swapped the engine out for a cheap 1989 250 inline-6 with integrated head. My question: As this newer engine came complete with the exception of most of the emissions gear being defeated and missing a carby what is a decent/cheap workable carb I could use to get me by until my rebuild is ready to be swapped back in? I’m looking for something with the minimum cost and complexity for the application and care not to deal with recreating the emissions system to make it operate correctly (this will be legal in my area as the body is a 1967). I am mechanically inclined but a noob in this arena. Cheers and thanks in advance!
