Need Help Picking out an Amp.
I have a 1968 C-10 Truck and are running a custom autosound with 300 Watts Peak featuring 2 Channel RCA Auxiliary Input for Satellite etc, 4 Channel RCA Pre-outs and Subwoofer Line out w/Level and x-over Adjustments with (2) 6in Pioneer Speaker 120 watt speakers, Also, i'm running (2) 10" sub wooders, What amp would you recommend or would i run multiple ones. I've seen a lot of people recommending the Rocksford Fosgate Punch 300 series.

Not a Rockford fan. Had issues with them years ago and never have gone back. Depending on how you have the subs wired, you can go with a 2 channel and a monoblock, or a 4-channel. 4-Channel can be operated in 3 or 4 channel mode depending, again, on how you have the subs wired.
To get the most out of the subs, you might be best with 2 amps. If the subs are 4 ohm single voice coils I'd wire them in parallel and use a monoblock amp. Then a more basic 2-channel for the mains. Which amps you use are really a matter of budget and personal preference after you establish the required RMS for each set of speakers and how you want to wire the system. Never had the $$$ to get into the higher end stuff though, so YMMV.

Without knowing the information on your subs, I would get one of these...
http://www.sonicelectronix.com/item_...PI-P900.4.html Solid, reliable, cheap amp in a pretty small footprint that does rated power. Run the front two channels to your 6s. Bridge the rear two to the two 10s.

I'm a fan of RF. I have the Prime 300x4 5-channel amp and it impresses me for an entry-level amp. I'm running it to Punch 4"s and 6x9s. Wanted the Punch equivalent but it was on back order through my distributor. They are pretty much my go to line when doing boat stereos.
For the money and size I've used the Massive Audio NX5 5-channel amp with great success. Sounds good, plenty of volume and very small. I'm currently running a 5-channel Phoenix Gold in my boat and I couldn't be happier. Consider moving that to the Tahoe and going with 3 amps but it performs too good for size and amp draw. I bought thus a few years ago because I was a big PG fan back in the 90s and it hasn't disappointed.
