Torque Converter????

I have a '67 c10 with a 427 engine w/ headers complete dual exhuast a TH400 and brand new posi 3.08 gears. It currently has a 2500 torque converter in it. I was wondering what i would gain by putting in a higher, say 5000 rpm, stall converter in? What exactly does the converter do, what would the switch change as far as daily driving, and would it be a good move?
