gonna start resto, need some ideas/advice.

ok so i bought a 89 dodge dakota today off my buddy for 135$ so im thinking this winter starting my resto on my 72 gmc c25. my plan is since the only place i can work on it is at my dads and only during winter, then drive during summer then repeat(no room during rest year on farm).
my plan is to do one section at a time this winter pull bed off and clean from cab back put new brakes(disc?) sway bar maybe. my question is what suggestions to u guys got so i dont get carried away and have the whole truck apart, cuz i cant afford to get carried away with a baby coming and my dad wont like it come spring lol.
i was thinking a check list and only doing whats on the list, but thats never worked for me lol. so long story short i need ideas on how to stay on track, and focused.
