All this is new to me and leaving me a bit

That's the stuff it's. 2 part mix. And I usually start with like 100 grit paper to take down the high spots or not so smooth edges and then block with 180 then feather around with 220 and 300 and then sometimes 400 grit. I'm not a huge fan of the primer will fill it method I like to be able to make my bodywork smooth enough to seal it if I had too. I usually use an etch primer first for any bare metal any larger than the size of a nickel. Then a few coats of high build primer and some guild coat then block with 400 and then 600 and paint....hope this helps
