Tec questions

I have a 76 sierra classic with a 5.7L 350 and I am looking to buy a engine rebuild kit but I'm not sure what to go with. I don't know what Rod Bearing Undersize is, what Main Bearing Undersize is, what Piston and Ring Oversize is, or what is a good size or ratio is with any of that. Also do I need to have a valve relief on my pistons? If I replace the cam as well what should I be looking for in one?
