Engine pull to install tranny

I'm ordering my Bowtie overdrives TH700 tomorrow. I'm planning on installing it spring break. I'll plan to have it out of comission for a week at my grandpa's shop - it will sit next to a 37 Buick Special & a 58 Chevy Pickup. I take it the easist way to swap the tranny is to take the hood and core support off and pull the engine & tranny through the front of the truck. We have an engine cherry picker. What do I rest the thing on while hooking up the tranny? Should I drain the tranny & the oil before lifting the engine out? Do I install the torque converter on the tranny, then the flexplate, then the engine? Tip on installing the torque converter? I don't want to go in this overwhelmed & clueless.

All of what I'll be installing: TH700 tranny - new tranny lines - new bolts all around - new torque converter - new flexplate - new tranny cooler & lines - new u-joints - rebuilt electronic carb - new starter. Enough to do in a week?
