"Odd" research help request.
Brief back ground..... Back in August I gave up being a meat cutter for Publix Supermarkets, Due to , One, A$$holes in management, and Two, My ribs were breaking from the sheer amount of weight I was having to lift. I was put over a new program called "Aprons Simple Meals" as a "Meals Specialist". I am over the program in my store and am responsible for 4 other stores in my district.
You can get a little better Idea of what I do by going to www.publix.com and then clicking on the "Aprons Simple Meals" tab. That said, Ive had a couple girls from VSU come and ask me to speak and prepare an Italian dish at an "International" cooking class they are hosting at the college. Im making a "Bruschetta Fresca". Heres my problem, I cant find any "history" on the dish, where it came from, different ways to make it etc...Can anyone direct me somewhere that would have this information??? Any help is appreciated!! THANKS!!!! junk ![]()

I put bruschetta fresca in Goggle search and found a lot of receipes, etc, that you might look at and build up a presentation with bits and pieces from each. it is Italian.
I also put in "where did bruschetta fresca come from" and there is alot of different things. One thing is the cooking of Parma which is somewhat similar. They say when Hannibal invaded Italy his troops were fed by the locals and as they moved on the receipes passed along. That info and a little BS might sound good for lack of any other info.

as someone who is half italian/half german, and also has culinary experience, do you just want a nice basic recipe, or do you want cultural/market difference recipes IE north italy vs south italy styles of cooking, its pretty much just slight variances, but to someone out there that might be able to spot the errors, its one less thing that they could critique in your presentation

also a little italian thing that our family does(north genoa region) is you have a plate and put a thin layer of olive oil in it, and thenadd sea salt and fresh cracked black pepper,somtimes also adding in rosmary and balsamic vinegar, good dipping for the bread
