I just checked my GM Serivce manual and all it says is "The number of propeller shafts is dependent upon the wheel base of the vehicle." All of the pictures of long wheel base trucks show two shafts.

For the same reason the birds fly upside down over Ohio. (And I know of what I speak, I spent several months in Columbus).
