engine temps

I was riding with a friend he is running a 350 like mine mild cam headers and what not. I noticed his engine ran between 210-220 I thought mine was high at 195-200. He siad his old 4x4 runs at 220 constant. So what is to hot for these engines? And for performace what is the best temp to run? I know this is somewhat a preference thing but just curious.

For performance,you want it to run very cool. I would love it if my engine never saw over 160-180 at the track. Of course on the street you need it a little warmer to burn out the impurities and keep the sludge down.
