A couple of 67 questions

I'm going to lift the cab on a '67 with a 3-speed manual transmission.

Question 1
How does the wiring harness separate from the firewall?

Question 2
How is the speedometer cable disconnected from the transmission?

I believe that you need to undo the center bolt in middle of the firewall side of the harness plug and pull. (it is possible that there are two or three bolts that you may have to undo on the inside part of the haress as well, these loosen the whole fuse panel assembly. As for the speedo cable, it should a bolt holding a y shaped holddown, undo that and pull cable out. If it is not that, but you do have a knurled knob that simply unscrews and then you pull the cable out.
