I'm wondering if it's possible to put 6-bolt rotors on a 1/2ton 2wd bus that has 5-bolt now. I'd like to do this WITHOUT changing calipers or spindles if possible; any ideas?

Sure. Use the rotors that companies like ECE (Early Classic Enterprises) sells for the 67-70 disc brake conversions.
