The jump out from under the brakes comment leads me toward not hooking up the vacuum for the booster. Even though that should be pretty obvios?

Probably not your issue, but I replaced my vacuum advance unit on the dizzy awhile back as I replaced rotor/cap/wires/etc....it lasted 2 months and started leaking [air]. Took it back to the parts place, they replaced for free, runs beautiful now, 'cept for the oil leak.

You have to admit its not a frequent cross-interest.

Our consulting firm has 3 guys with classics out of 50 people. Not bad. a 70's stang, an early 60's stang, and my C10.

yeah, it probably is bad plugs or something, I actually broke one of my sparkplugs without realizing it while doing a valve lash adjustment, truck ran bad and I even backed out my adjustments before finding the broken plug....

If you haven't solved this yet...
in a small nutshell...

Re-gap the plugs to .045. Make sure firing order is correct and wires cross correctly...look under the hood for mishaps when it's dark outside...you will see arching if there's a problem. Since they gapped the plugs (wrongly) for an HEI, make sure they used the correct plugs for your HEI distributor. Look for missing/broken/un-plugged-in vacuum lines...spray carb cleaner at likely suspects when running to see if the engine changes tone.

Find the mechanic and get a list of what he messed with. Get them to re-emburse your first bill for all the trouble you have gone through. That's the only way we can get these irresponsible shops off the street. This could always be a fluke, but I doubt it.
