FWIW, I'm a fan of the mirrors. Part of what makes these trucks cool is the transformation of their inherent utilitarian background into something as impractical as a hot rod without completely abandoning their original design cues.

I think a small Nova-style or a D-49 would set it off nicely.

...but that's just me.

You just about covered my opinion. The sport mirrors would look good on there with all the stock trim you have. Keep us updated on the decision.
