trailing arm bushings
What's the best way to remove the old ones? What's the secret?

I used a propane torch not to long ago, I tried to keep most of the heat on the center steel insert once that droped out I was able to push the rubber out with a screw driver.

A press. Make sure you put a metal spacer between the ends of the arm (the open end) so when you press out the bushing you don't colapse the ends.

Ok, I have neither a torch nor a press so I had my mechanic do it. He did it for free which is great, but they pressed out the outer sleeve and all and when I got home I realized my ECE replacements came with only the rubber bushing and inner sleeve.
Now what? I'm going to go back tomorrow and talk to my mechanic again.

Take your bushing with you and let them press them in. If they are just rubber replacements, they will press in fine. If they are urethane, they might have to be frozen before they will press in.

They pressed out the outer metal sleeve. I only have the rubber bushing and the inner sleeve now.

I went back to the guy that pressed them out and showed him how my new ones didn't have the outer sleeves. He said his shop just gets them from O'Reilly's and they come with the outer sleeve. So, I'm going to stop by on the way home from work. He still had the old ones laying around, so he gave those to me to reference.
On that note, he said it took the press AND the air hammer at the same time to get them out. Those suckers were stuck in there good.
