check engine light/carb

so i got a couple of questions. #1...the previous owner of my 87 v10 took out the tbi and put in a carb(ive had it for about 3 weeks) all of the wiring is still there so i am assuming that is why the check engine light is on.... is there a trick to make the light go off in these trucks?
and #2... it has a edlebrock performer carb and when i gun it in a turn from a stop or try to hop a curb ect. it sputters pretty bad. almost to the point of cutting off. is this normal or does it just need to be tuned better? would a thunder series carb help this? im planing on building it up a little for offroading and if it has trouble hopping curbs something needs to be done haha

cut A5 at ecm to turn check engine light out. what fuel pump are you running mechanical? Are you drawing fuel through the electric pump in the tank? I cant see why somone whould put a carb on a TBI truck?
