can anyone give me a source for waterproof seats, not covers, but the entire assembly?

VT's right on with the marine stuff.
There are special upholstery foams that are made for marine use(they don't absorb the water like most foams) and also marine vinyls. Any upholstery shop worth their salt should be able to recover your seats with all marine materials if you want. if you go that rout, make sure that they seal the seams of the fabric as well(usually done with silicone or specialty hot glues on the back side of the seam)
