changing the rims and tires or moving the rear end back a foot?

the thinner sidewalls will make it handle better and ride worse

Longer wheel base = better ride quality (but that "look" is gnarly, and not in a good way, IMHO)

I don't know about about handling, but it would possibly improve ride quality due to the longer wheelbase. But at what cost - the goofy look is not very appealing, the frame would be strained in the center if heavily laden, and negotiating a parking lot would be challenging. With the rear axle pivoting at the bumper, the front end would require a very large swing area to avoid clobbering adjacent cars with the side of the truck.
