another too hot question

after installing a new 195f t-stat due to a no heat situation the gauge reads really high. a little back ground to help, old t-stat a stewart/emp 195f with 3-3/16 bypass holes would not get warm enough to give heat, changed to a 195f motorad t-stat, no temp sender change and fired engine warmed up and checked coolant level ,drove for 5-7 miles still gauge seemed high, would get almost to red then cool to about half of normal range like t-stat is cycling open and closed, took temp of coolant after driving with a thermometer reading 169-171 f. have 350/th350, fan clutch, 4row radiator, with vintage air system

yes boiled in water to make sure t-stat was good
