What is the latest model steering gear I can use to when installing power steering?

I am hitting the yard tomorrow and they have 2 1975 steering gears but I figure the later the better. How late can I go?

Not sure what you mean exactly by "steering gears" but the year breaks are 73-87 for 2wd trucks, and go up to 91 on Burbs.

91 Suburban is the latest, or 87 pickup.

Sorta... 73-80 is a direct interchange.. 81-87 will bolt on the same, but used different hose fittings on the box than the 68-80's did.. the early ones used an "inverted flare" fitting and the later ones use and "O-ring" fitting, Edleman makes adapters to use early hoses with later steering boxes..

Up to a certain year. The steering boxes are all the same, but the fittings on them starting sometime in the eighties (I forget which year exactly) are metric rather than standard. I know boxes up to 77 will work with no mods because that's what I have on my truck.

In my experience a 35 yr old junkyard steering box is good for a core. Most are worn and need to be rebuilt.

so would a 91 suburban be better than the original 85 truck one that I have? or are they basically the same thing.

You'll want to turn the steering wheel full left to full right and count the turns. I like the ones that are 3 turns but they are usually in high optioned trucks. Stick with something '77-87 truck and it will bolt right in.
