hinge pocket's

I was looking a door's to cut up for my blazer and some door's seem to have a recessed hinge pocket and some do not, why is that?? Also when I cut the door's do I need to transfer the big latch plate that bolt's the the door in the jamb?? And one last ? should the passenger side also have the big hinge plate set-up?

You will want to install the latch reenforcement on your Blazer door, otherwise you will have the possibility of the cracks in the latch area.

I am not sure what "big hinge plates" are.

The big hinge plate would be the unboltable ,is that a word piece that bolt's the door where the latch is?

I believe that you are refering to the heavy backing plate that the striker bolts screw into. If this is the case, yes it should be on both sides.
