Thermostat 195F, when driving engine is always 150F

Still deciding on how I want the dash to look, as to get the billet face, or try to do something custom. I have seen some guage sets by Autometer, but some of the digitals trip my trigger too. Also, I figure neither of the companies will accept pocket fuzz for payment....
