I'm not sure where you are in Nor Cal, but Cordova Truck in Rancho Cordova usually keeps a good selection of late model seats in stock. 916-366-6866, they always seem to have a grey and tan seat from newer truck sitting there looking for a new home. They don't give them away, usually $500 and up on nice ones.

Look for a 92 or new C1500 seat. They will have the headrest and fit in pretty easy. They go for around 100 to 175 for the 88-97 years in my area and the grey happens to be one of the main colors.
The straight bench is easier than they 60/40 seats to put in, but niether are that tough.

Either the middle or front bench seats of a late model suburban, tahoe or truck will fit nicely

I got the LMC velour bench seat kit. Worked great. I'm looking for black velour material to do headliner down to back of cab and door panels. Can't find it in my small town but know it exists somewhere.
