Manual valves are operated by a switch that internally lets the pressure through as you toggle it. Electric valves work on a actuator type plunger. The switch (electric) is pressed and it sends power to the plunger and it moves one way or the other depending on up or down or type of valve used. Electric is much faster and alot less PITA!!

A manual valve is just that, it's a valve that you open, by hand, with a lever attached to the valve. A good example is a water faucet.
An electric valve is one that is activated remotely by a electrical solenoid. Usually by pushing a button or switch.

So with an Electric Valve setup, I could mount the valves somewhere out of sight (like under the bed or something) and then just run the wiring into the cab, so I could toggle them?

You got it. Out of sight and out of mind(until you push the switch).
