87 1/2 tbi to carb?

Hey guys, I am currently building a derby truck to be ready in under a month, and I am wondering what all has to be done to convert this 350 tbi efi engine to carb, for ease of setting up/wiring. Is it worth it? what has to be done for this conversion? I understand all aspects of carburated engine wiring, but with this truck, I would just like to know what would be the best bet for reliability/power, without the hassles of all that wiring. I can still set it up to be simple wiring but just curious if any of you have done this in this type of project. thanks!

There really isn't all that much to the TBI harness, but still more than carbed. Computer is under the dash, pretty well protected, and the relays are on the firewall away from impact zones.
