Bottom of the door gap

On my 79 k20 I can fit my fingers up to almost the second knuckle under the bottom of the door I've tried adjusting them but can't get them close enough and now the passenger side door leaks a little on the top and you have to slam them to shut them

That may just be the way it is.

I'd fit the door flush to the back of the cab, and the top of the door slightly inboard to the A pillar (to prevent it from scooping the air) and let the bottom fall where it may.

Well yes they did and boy it's not good it's set back to far. I went to a body shop tonight to have them adjust the doors and I was told I was **** out of luck because of the rocker panels so right now I'm a disappointed kid because I thought I had got some amazing deal rust free problem free truck and then I find this out

I have the same problem when I replaced my drivers side rocker. Still bugs me.
