70 Jimmy, Hill Climbing, and Fuel Pickup

I have recently replaced the fuel tank in my 70 Jimmy 4x4 and eventually I want to do some hill climbing in it. However, today I was watching some hill climbing videos and got to wondering, what's to keep the fuel from draining away from the old, non-fuel injected sending unit (or even a fuel injected one for that matter)? While changing my tank, I noticed that the sending unit doesn't have a way to keep gasoline over it for constant pickup. Is there some kind of mod you're supposed to do? Or just run and hope for the best? I don't imagine that "back in the day", or even nowadays, the average off-roader made fuel tank mods to keep that from happening.

You could baffle the tank http://www.summitracing.com/parts/aei-18650/overview/ but the other problems can be the carb floats can make it flood out and or lean out on a steep hill.Or off camber the oil pump can suck up air giving you low oil pressure.

Don't hill climb on a low tank. A fuel regulator helps with float issues due to angles and bouncing. EFI operates on a closed pressurized system,so no worries.
You can't lean a truck hard enough (without rolling) for oil to cavitate from the sump pickup. On my '71 Blazer that I wheeled hard back in the day I installed a 6qt oil pan,2qt filter,and hi-volume oil pulp just because I wanted to do anything that enhanced it's off road performance.
