Those running 20"s - any issues w/ Steering

I have a good line on some 20" wheels and tires, and was wondering are there any issues with steering?

Depends on what suspension you have & the offset of the rims. There's lots of room up front with our 20s.

On a 49 - Going to run an s10 chassis up front and an s10 4x4 in the back.

I looked into Camaro (2010) and they have 6/6.5in backspacing and 35-40mm offset. I actually have some 15" IROC on the truck and they rub on the front (no spacers).

Depends how low you are going, and how wide the front wheel/tire will be.
As a general rule of thumb the s10 chassis will like a wheel that is closer to a 0 to +5 mm offset range. It is also something you should note that the new camaro bolt pattern and the s10 pattern are not an exact match.

I know the new camaros are 120mm and are not a true 5x4.75, I am looking for other options as well.

Looking to go with a static 2/3 for now but would eventually like to bag it and lay frame.

I'm running 20x8.5 with 245/45/r20 tires, with 4.75'' backspace. Can't quite turn lock to lock without contacting the frame, but it is very close. that's about the most backspace you can run with that tire size. Anything more and you would probably want to run spacers, I'm pretty against that, and it also limits you on the outer edge with fender clearance.

Here is what I am running on Cecil

The fronts are ridler 695 18x8, 5x4.75 +0 4.5"

Tires are Kuhmo Ecsta 255/55/18

I do have the issue with front tires rubbing on a sharp turn, you can make a 90turn without rubbing but a 180 you will need to back up.
