'57 3100 6 lug to 5 lug rear axle conversion
What brake drum can be used if the original axle shaft is plugged and redrilled for 5 lugs?

You can redrill the drums or find out what drums with the pattern you have drilled are the same diameter and have the same width
You have 11 x 2 shoes on there according to my cheat sheet from Napa . There are plenty of 11x2 Chevy car drums to pick from from the 50's. The center hole will have to be exactly the same as will the Id and the width of contact area of the drum should be close enough so the shoes make full contact.

1954 chevy car hubs drums and brakes can be swapped out in front will give you 5 x 4 3/4 pattern.
