Painting inside cab different color
Im really wanting to paint the inside of my cab (Gray) a different color than what im going to paint the outside (Black). Im just not sure where to stop the color break. Im assuming everything inside the truck would be painted the same color until I get to the interior rocker panels, and then the interior rockers would be painted the same as the exterior? The whole inside of the door would be painted gray and then the outside of the doors would be black?
I guess I haven't really paid to much attention in the past to other trucks that have been painted a different interior/exterior color so any opinions are welcome.....

Use the weatherstripping around the door jam as the break, so the door jam would be body color, on the other side would be all the interior color. I would paint the entire backside of the door the interior color with just the outside body color.

My truck is a different shade of green inside the cab then on the outside.
I am thinking of doing my exterior roof/hood/lower(below moulding) in a very metalic gun metal, I might paint the interior the same color at that time.

I would be careful going out of the box on the inside color. I know its your vehicle, but doing something you have to defend later is a bummer. I have an expectation of what the inside color should be when I look at a car/truck. For me it's kind of a standard, like the gas pedal on the right and clutch on the left. If you deviate you get to go on defense! Try to find a sample an make sure you really like it. First thought in my head is, didn't have enough time or money to keep going on to the inside.
My two cents, probably worth the price paid!

67 and some 68 trucks painted the inside the trim color. So a black truck with an all reds interior was correct. Its really a matter of finishing it out properly. If you want a series of greys inside it could look nice. Just be aware a non-original interior color/scheme can be a negative selling point.
Here is an example of a yellow truck with the fawn trim and sheetmetal as the factory did it. The cab trim color ended at the weatherstrips as noted before and the doors at the edge of the skin like a cheap color change.

In reflection a GLOSS Black truck and a silverish gray trim/interior would look very good. A lot like one of my favorite vette combos, black/gunmetal.

I didn't paint my interior a 'different' color, but I did use a matte clear on the interior to contrast the gloss on the exterior. I broke the color scheme on the doors like the pic that SS Tim posted above and then used the break for the weather stripping for the rockers.

My exterior is going to be white with black stripes. I plan on going black on all the interior. I'm having the doors and door jams painted white. I will run black panels on the door. I'm hoping the white top section of the door leaves just enough white to tie into the outside but the black panels tone it down enough to flow with a black dash seats carpet and roof. We will see how it turns out.
