Might have found the answer to my own question- I think they are also using the vacuum for the DOD system. Of course, if that is disabled the pump could be removed.

It looks like ICT Billet has a pretty good answer to the power steering question and at a much more reasonable cost compared to the others. The only issue I see is that the pump appears to be put on the wrong side of the engine requiring more hoses across the front end.
