yes the cst trim was available in 68. not positive but i think it might have been available with a stepside bed, i have seen steppers with side trim.

I always thought the cst stepsides were strange/unfinished looking, the ones I've seen all had no bed trim

Yeah, the CST/Super Custom option was available on any and all 10-30/1500-3500 trucks. Only the 67/68 Stepside/Fenderside/Cab & Chassis got side trim, but only on the cab. You could could have a CST Custom Camper 50th Anniversary Longhorn (or Stepside) 396. Another rare one would have been a K/10 CST Custom Camper (or Stepside) 50th
