I'm planning on painting my truck with the doors on. Should I put some paint under the hinges and on the pillar before I get them set in place?

I surely would otherwise it is unprotected to water that will get behind it

Doesn't seem like there was paint there from the factory.

If your painting the whole truck spray 2 coats of epoxy everywhere. No better corrosion resistance than epoxy

That doesn't mean it was a good idea. Look how much rust is normally behind them also.

Would not the paint act as a sort of a glue and stick and crack when you try to adjust the hinges apon assembly?
