A 2" will give you just a little rake, and the 2 1/2" will level it. I've got a similar truck (2015 LTZ Double cab) with the same rims as you, and I'm running 275/60/20's without issue at stock height. With your level on, I'd go to a 275/65/20 tire (1" taller than mine and 2" taller than stock). That seems to be the biggest you can safely go without rubbing at full lock or max compression.
