If you gauge is near hot, then either you are in fact over heating or the gauge or sending unit is not accurate. Check it with a known good gauge, or use a temperature gun.

I did that, put in a new 180deg t-stat and even used a thermometer in the open radiator. I let it idle for a good hour and the temp sind the get above 190, so I know the cooling system is working as it should. I ended up tracing the wire and at the firewall, I found the connection was loose(but still connected), and I put a spot of dielectric grease in a clicked it but together. Now my gauge works again

Not 100% correct, a thermostat can't control what your maximum temperature will be but it can control what you minimal temperature will be. If you have a motor that runs at 165 a 195 thermostat will raise the temperature to 195.
