You could use something like this.
https://www.summitracing.com/parts/flx-32082/overview/ I made my own with a piece of exhaust pipe, a nut welded to one side for the sender, and a bolt welded to the other side for the ground. Needs to be grounded for a good signal. Be aware, it will only be accurate when the thermostat is open.
