Which Wires Do I Need And Which Should I Cut out Of The Way?

Description is A little vague? Can you elaborate?
One gray wire, I can think of, is the one that powers the tilt column light.
Others are the heater controls illumination.

I just installed the AAW harness and Dakota Digital gauges. If I understand your question, I did not use the Temp or Oil Pressure wires on the harness as the gauges had their own. Pretty sure I used everything else though. It was just a matter of running the wires to the control box instead of pinning them out to the factory gauge plug.

Just Wondering What You Did For Constant Power And Accessory Power?

Not Sure What The Dim Is For As Well If I Need The Tan Brake Wire?
