Kind of depends what the trucks usage after you get it back together. I like powder coat. After sand blasting and powder coating the finish is very durable. My 98 Wrangler when I redid it I had the frame sand blasted and powder coated. It's been 15 years and still looks very good.
On the other hand my 80 Camaro project I sand blasted the parts and sprayed a single semi gloss black paint. It will never see a winter as long as I have it.
Powder will be tougher. Single stage paint will be cheaper and easy to apply.
