Now I'm no proponent of ditching the back-of-the-seat tank. I've had two trucks with the tank forward of the axle, [a '67 K/10 Sub and a '71 K/1500 Jimmy] and fuel flow and fuel pump issues come with the territory. And those are Factory installations.
Mechanical fuel pump works just fine in my '68 C/10 Stepside.
Good on you for having the guts to keep the gas behind the backseat.
Honestly I considered moving it but read that it can be a pain for the reasons you mentioned. I bought the truck with shaved doors and it had a myriad of issues with the factory latches and I just got fed up with them. My last pickup had them for years and I had no issues.

I may look into a flush gas cap soon but I doubt I'll move the tank.
