Painless Wiring Harness

I'm restoring a 71 K5 CST. I am basically replacing everything under the hood except the engine block. Right now I have the complete nose off, the alternator, water pump, valve covers, intake manifold, exhaust manifolds, etc... I also have a brand new wiring harness from Painless. At what point should I start putting it in? Is it easier to do now with everything off, or will it be better after everything is back in new?
