Problems when truck is parked for a while...

I dont drive my 74 350 GMC to often (I have a Jeep and a Camaro) what engine problems may occur since my truck isnt driven very much?? Last week the engine just died on me. I pulled to the side of the road and got it to start again. Felt like gas wasnt going to the engine. When I would go 55+ miles it would just turn off. My buddy who works at a carb shop cleaned the Edelbrock carb out and it seems fine now. Can a carb go bad if the truck isnt used often? What other problems can I look out for? Thanks

Fuel filter, fuel pump are the things that come to mind with it being gas related. But I'm wondering if the module in the HEI is getting hot and when cools then is able to run again. If you install a new one make sure to use dielectric grease to keep it cool.
