Any ideas what this is on the passengers side next to the ash try?

A counter. Some 3rd generation Trans Ams had it in the over head console.
You can set it as a phone number of a hottie yuo just met, the miles of an oil chainge, or as a trip odometer that needs math done. (set it at current miles, drive for a while, then fill up and figure your MPG...then wish you had a geo so you could quadruple that #)
It is not a factory option, and I doubt it is dealer installed.

Seemed strange to do such a nice job on restoring the interior and the stick something like that on there if it wasn't factory. To each his own, right?

Man, that sure is an awfully big shot, I had a hard time finding what he was talking about...I think it is his way of showing off that nice interior...looks good.
