1990 gmc 2500 engine issue...help needed

i have a 1990 gmc 2500 it starts an runs fine. but after it gets hot about 5 or 10 minutes down the road it just dies. engine will turn over but will not start until it cools completely down. i have took the catalytic converter off an still does the same thing. radiator does not boil over so i dont think it a cooling issue. any help will be appreciated.. thanks in advance
